Simple Milk Chocolate Truffles!

Hand Rolled Milk Chocolate Truffles! Years ago these little spheres of chocolate and cream were named after a fungus called truffles.  Pigs and dogs used to, and still do, sniff out rare fungus truffles to the delight of their fungus eating friends.

Today it’s time to make the chocolate version!  Minus the canine or piglet that is. This will quickly become your ultimate standby for a delicious chocolate treat that leaves your friends asking for the recipe.  Chocolatiers will charge you $2 to $5 for EACH of these.  You can make them for a few cents and, with this recipe, you can make them to perfection!


1. One package of Guittard Milk Chocolate Chips(11.5oz) or go fancy with Guittard’s Hawaiian Milk Chocolate.
2. 1/2 Cup(4.3oz) – Heavy Cream
3. One whole – Madagascar Vanilla Bean

4. 1/4 Cup – Cocoa powder
5. 1/4 Cups –  Melted dark chocolate


1. Pour the heavy cream into a pot.
2. Cut the vanilla bean lengthwise and scrape out seeds.  Put both the bean and the seeds into the heavy cream.  Heat together on medium-high heat on stovetop.

3. Place milk chocolate in a microwave safe bowl. Heat chocolate for three, 20 second intervals, in the microwave.  Set aside until the heavy cream begins to boil.
4. Once the heavy cream has started to boil pour the heavy cream over the milk chocolate.  Removing the vanilla bean first.
6. Do nothing for 1 minute.  Let the cream melt the chocolate and then whisk together until fully combined.
7. Set aside in the refrigerator to cool and set overnight. Cover with plastic wrap.

Building The Truffle : Instructions

1. Scoop out ganache with a disher/melon baller(can also use a spoon).

2. Roll them in your hands to make them into a smooth ball shape.

3. Melt the 1/4 cup of dark chocolate in a small bowl. Use the microwave in 20 second intervals until melted.

4. Roll the round truffle balls that you have already made into the melted chocolate.  You only need a THIN layer of chocolate on the truffles.
5. Roll the truffle in a small bowl of cocoa powder to finish.  Set aside to set.

  1. We made these! So yummy! Not as pretty as yours though. We had a tough time making the outer chocolate layer thin. I was afraid of overmelting the chocolate so maybe it wasn’t thinned enough by heat. I was thinking of adding a bit of cream to thin it but thought I better stick to the recipe.


    1. Glad they turned out! Good job not adding cream. It would have seized the chocolate. Some chocolate is thicker than others. If the chocolate is a little thick cover your fingers with chocolate and then roll the truffles between your fingers to get a really thin chocolate shell. Trick of the trade!
